Something happens to your food when you live in New England. You start finding cranberries in everything. Subs now contain turkey, stuffing and cranberry sauce. Favorite drinks begin to offer cranberry cocktail a starring role: cosmopolitans, cape codders, and of course cranberry margaritas. You just can’t seem to get away from the tart, red berry. Hell, I’ve even spotted a few bogs on my drive to school. There is no escape! So I thought, why fight it? That’s when this amazing chicken salad entered my life. It’s quintessential New England, cranberries and all. It’s also absolutely delicious.
New England Chicken Salad

4 cups cubed, roasted chicken breast
1 cup mayonnaise
1 teaspoon paprika
1 1/2 cups dried cranberries, roughly chopped
1 cup celery, chopped
2 green onions, chopped
1/2 cup green bell pepper, chopped
1 cup pecans, roughly chopped
salt & pepper, to taste
Combine chicken, vegetables, cranberries and pecans in a large bowl.
Stir in mayonnaise and paprika until combined well.
Season to taste with salt & pepper.
Allow to chill for 1 hour for the flavors to combine.
