When I first moved to Massachusetts most of my new friends were discovered with the help of my little black lab mix, Kaine. One of Kaine’s best friends was Ella, another black lab mix. Her owners parents were named Nikki and Aaron, and they taught me a killer version of one of my favorite pasta dishes from The Outback – Wallhalla Pasta. I’ve been making my adaptation ever since, and always to rave reviews.

1 stick butter
1 zucchini, sliced into discs
1 summer squash, sliced into discs
1/2 sweet onion, chopped
1 chopped, seeded tomato
1 cup sugar or snap peas
2 chicken boobs
1/2 cup heavy cream
2 to 3 tablespoons minced garlic
1/2 cup parmesan
salt & pepper, to taste
Par-cook the chicken.
Use 1/3 of the stick of butter, saute onions, add chicken & cook 2 minutes.
Add garlic, cook 2 minutes.
Make a well in the ingredients; Add another 1/3 of the stick of butter.
Cook both squashes for 2 minutes, then stir all pan ingredients together.
Add tomatoes and peas.
Add last of the butter, cook 5 minutes.
Add cream and parmesan. Stir until parmesan melts.
Toss with cooked pasta.
Add salt and pepper to taste.
