Of course I’ve seen Julie & Julia! I don’t know how you could ask me that. Seriously, don’t you know who I am? Well, if you’ve seen it and, if you’re anything like me, you’ve been craving bruschetta with an audible crunch ever since. You know the scene I’m talking about that evoked the craving, don’t lie.
Well, fret no longer, you’ve found what you’re looking for – a “recipe” for Julie’s Brushcetta – only this is Josey’s Bruschetta (which I think is even better, because, well, you can actually taste this one and be rid of that craving once and for all – well, at least once). Keep, keeping it real.
Bruschetta ala Julie and Julia
2 tomatoes, diced
1/4 cup red onion, finely diced
2 cloves garlic, minced
5 to 8 basil leaves, rough chopped
extra virgin olive oil
salt & pepper, to taste
baguette, sliced 1/2 inch thick and on a diagonal
Combine tomatoes, onion, garlic and basil.
Drizzle with olive oil to coat.
Add salt & pepper to taste.
Stir and set aside.
Brown bread in olive oil heated in a skillet over medium-high heat.
Remove from heat.
Top with tomato mixture while still hot making sure to drizzle some of the tomato juice over the bruschetta.
