Blue Cheese Dressing

Blue Cheese Dressing, ah, the perfect remedy for that moment when you realize your lips, tongue, cheeks are on fire while sucking on a perfectly juicy and spicy buffalo wing.  Also the perfect companion for an otherwise boring, virtually tasteless hunk of iceberg lettuce.  When topped with blue cheese dressing, a few extra crumbles for good measure, some chopped tomatoes, and if you’re really likely some crispy, salty, smokey bacon pieces – well now, virtually tasteless is out the window and taste bud explosion occurs.  I swear, it’s the dressing.

Blue Cheese Dressing

Ingredients
2.5 ounces blue cheese crumbles (plus more for the good measure)
3 tablespoons buttermilk
3 tablespoons sour cream
2 tablespoons mayonnaise
2 teaspoons white vinegar
1/4 teaspoon white sugar
1/8 teaspoon garlic powder
salt & fresh ground black pepper, to taste

Directions
Using a fork, mash together the blue cheese and buttermilk.
Add sour cream, mayonnaise, vinegar, sugar, garlic powder, stirring to combine.
Stir in extra blue cheese crumbles to your desired consistency.
Season with salt and freshly ground black pepper to taste.
