Mississippi Mud Bars

My teenage boyfriend used to make these while his mother was out of the house and we would stash them down in his room so we wouldn’t have to share – these are bad (ie. make you do bad things AND bad for you), but they’re oh-so-good!

Mississippi Mud Bars

Ingredients
cake:
1 cup butter or margarine
2 cups white sugar
4 eggs
1 1/2 cups flour
1/3 cup cocoa
3 cups miniature marshmallows
icing:
1/2 cup butter or margarine
4 cups confectioners’ sugar
1/3 cup cocoa
1/2 cup evaporated milk

Directions
cake:
Cream butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Combine flour and cocoa – gradually beat into creamed mixture.
Pour into buttered 9×13 inch pan.
Bake at 350 degrees for 30 to 35 minutes.
Immediately sprinkle top of hot cake with miniature marshmallows.
Return to hot oven for 3 to 5 minutes until marshmallows are slightly puffed.
Remove from oven and cool for at least 30 minutes.
icing:
Combine confectioners’ sugar and cocoa.
Beat butter.  Add sugar/cocoa mixture alternately with evaporated milk until light and fluffy.
Spread over marshmallow layer.
Chill
