Drin’s Buttermilk Vanilla Bean Belgian Waffles

Every person who has had Drin’s waffles agree that they are the best they have ever had.  Simply A-Maze-Ing!

Drin’s Buttermilk Vanilla Bean Belgian Waffles

8 tablespoons melted butter
2 cups flour
1/4 cup light brown sugar, packed
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
3 large eggs, separated, at room temperature
2 cups buttermilk, at room temperature
1 vanilla bean, seeds scraped (or 1 teaspoon vanilla extract)

Prepare waffle iron.
Sift together flour, sugar, baking soda, baking powder, cinnamon and salt.
In a separate bowl, whisk together egg yolks, buttermilk, melted butter and vanilla (bean seeds or extract).
Pour the wet mixture into the dry mixture and stir to combine.
Beat the egg whites until stiff but not dry.  Fold whites into the batter.
Ladle the batter into waffle iron and cook for 3 to 5 minutes (or until no more steam emits from the waffle iron).
