Homemade Ginger Ale

Yup.  Like, from scratch.

Homemade Ginger Ale

Ingredients
Syrup:
2 cups ginger, coarsely chopped
2 cups sugar
6 cups water
Soda:
1 cup club soda
3 tablespoons ginger syrup
lime wedge
dash of bitters (optional)
ice

Directions
Syrup:
Place chopped ginger (ne need to peel) in a food processor and pulverize until well chopped.
Place ginger, sugar and water in a large stock pot.
Bring to a boil, then reduce heat to a simmer and cook for 1 1/2 hours (or until reduced by more than half).
Remove from heat and strain twice through cheesecloth or using a fine mesh strainer.
Allow to cool slightly before bottling to store.
Cool completely before incorporating into drinks.
Soda:
Combine the club soda, ginger syrup. 
Pour into a glass filled with ice over a lime wedge.
Add a dash of bitters if desired.
Stir and Enjoy!
