Ginger & Spice Cookies
2 1/4 cups flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon cloves
pinch of ground nutmeg
1/2 teaspoon kosher salt
1/2 cup butter, at room temperature
1/4 cup shortening
1 1/3 cups sugar
1 large egg
1/4 cup molasses
Heat oven to 350 degrees.
Combine flour, ginger, baking soda, cinnamon, cloves, nutmeg and salt.
Beat together butter, shortening and 1 cup of sugar until well combined.
Add the egg and molasses to the butter mixture; beat well.
Add the dry ingredients and mix until well blended.
Shape the dough into 1-inch balls.
Roll each ball in remaining 1/3 cup sugar and place 2-inches apart on baking sheet.
Bake until the cookies are lightly browned around the edges and puffed, about 13 minutes.
Allow the cookies to cool on the sheet for 5 minutes and then transfer them to a rack to cool completely.
