This is delicious, really simple and fast to make, and always well received.
1 bunch of broccoli, cut into florets, steamed
3 chicken breasts, cooked and cubed
1 can cream of chicken soup with herbs
1/2 cup olive oil mayonnaise
1 teaspoon lemon juice
1/2 cup shredded cheddar
1/2 cup panko crumbs
1 tablespoon melted butter
Steam the broccoli lightly (remember you’ll be cooking it in the oven too so only lightly.)
Cook chicken (I roast mine with salt, pepper, and fresh minced garlic), shred or cube.
Arrange steamed broccoli in a casserole dish.
Place chicken cubes on top of broccoli.
Combine cream of chicken soup, mayonnaise and lemon juice.
Spread this sauce over the broccoli and chicken.
Sprinkle cheese over top.
Combine panko crumbs and melted butter; sprinkle over cheese layer.
Bake in a preheated 350 degree oven for 25 minutes, covered.
Remove cover and bake 5 minutes longer.
