Classic Banana Bread
adapted from Cooking Light
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened
1 teaspoon vanilla
1/3 cup sour cream
1 1/2 cups mashed, ripe banana (about 3)
Whisk together flour, baking soda and salt.
Cream together butter and sugar.
Add eggs, one at a time, until well blended.
Stir in vanilla, sour cream, and mashed banana.
Add dry ingredients to batter and stir just to moisten.
Pour batter into a greased loaf pan.
Bake in a 350 degree preheated oven for 50 minutes to 1 hour.
