Rosemary & Lemon Palmiers

Lemon & Rosemary Palmiers

1 package puff pastry
1 scant cup of sugar
zest of 1 large lemon or 2 small lemons
1 teaspoon finely chopped fresh rosemary

Rub lemon zest into sugar with your hands.
Sprinkle about half of the sugar onto a flat surface.
Unfold the thawed puff pastry onto sugared surface.
Sprinkle with the remaining lemon sugar.
Sprinkle with rosemary.
Roll up the left vertically towards the cneter seam.
Roll the right vertical side towards the center.
Gently press together, wrap in plastic, and refrigerate for an hour +.
Cut into 1/2 inch slices.
Place on a lined baking sheet.
Bake in preheated 400 degree oven for 10 to 15 minutes or until golden brown.
