The Absolute Best Hot Fudge Sauce

I don’t like fussing with tempering chocolate, dirtying pots, or skimpy chocolate flavor.  What I do like is this hot fudge sauce, which is deep chocolate, rich, and fudgey.

Hot Fudge Sauce

3/4 cup white sugar
1/2 cup cocoa (I like Hershey’s for this)
1/2 cup heavy cream
4 tablespoons butter
1 teaspoon vanilla
pinch of salt

In a microwave safe bowl, combine sugar, cocoa and cream.
Microwave on high power for 2 to 3 minutes, or until sugar is melted and mixture is boiling.
Stir in butter and microwave for an additional 2 to 3 minutes, stirring every 30 seconds until thickened.
Stir in vanilla and salt. 


post script:  When this cools, and then chills, I have to admit I eat it with a spoon – it’s just that good.
