Cold Weather Salsa

1 can (28 oz) chopped tomatoes
1 can (14 oz) tomato sauce
3 stalks celery, diced
1 green, yellow, red bell pepper
2 onions, finely chopped
2 cloves garlic, minced
1 jalapeño pepper, diced
1/3 cup sugar
1/4 cup Apple cider vinegar
1/4 cup lime juice
1 1/2 teaspoons dried coriander
1 1/2 teaspoons salt
Louisiana hot sauce, to taste

Combine tomatoes and chopped vegetables in Dutch oven. Bring to a boil for 5 minutes. Stir in remaining ingredients and reduce heat and boil gently, stirring frequently, for 45 minutes or until slightly thickened.  Pour into hot jars leaving a 1/2″ headspace.  Process in boiling water for 10 minutes.
